Joshu-ya first opened its doors in 1986 at the corner of Dwight and Telegraph under Master Chef Negishi Morioka. After changing ownership several times, Joshu-ya was re-launched under the succession of Executive Chef Jason Kwon (Chef J. Kwon) in 2006. Despite being one of the youngest executive chefs in the Bay Area, J. Kwon established himself as a rising star and was awarded the Best of Berkeley honor two years in a row. At Joshu-ya, J. Kwon used his culinary experience to reconstruct the delicate flavors and texture of Japanese cuisine. His philosophy was to create new and daring flavor profiles that would enhance the level of umami in each dish. While J. Kwon is still part owner of Joshu-ya, he has moved to Washington D.C. to launch Couteaux Review.
Joshu-ya’s kitchen has since been under the leadership of Executive Chef Won-Hee. With over 20 years of experience, Chef Won-Hee has helped Joshu-ya earn a reputation for serving the freshest and most flavorful sushi in the Bay.
